Yup, and when parts are removed from the manga, some things don't make sense in the anime, or there's not much backstory to some of the characters and they just seem..mysterious. XD

othertimes, they copy the manga halfway, then stop, so the character does something but then afterwards we realise what the point of it was cos it's never shown again

For most of it to get the full story you really need to read the manga, since the anime is usually considerably shorter due to money. Also the more 'adult' the manga the better it tends to be compared to the anime since anime is aired for public screening there's only so much violence and what not they can put in.
However it seems to be more of a growing trend these days for the anime to just be an animated version of the manga. I personally like it done this way as I think the general fanbase has moved towards. A well adapted anime can and in theory should be better then the manga. The new show 'Claymore' is a good example of this. The fight scenes are done much much better then in the manga, as one should expect from something that moves as opposed to static pictures on a basic level, but it doesnt always work out that way.
